Create categories like you have for your current site, then install this plug-in.

That should take care of most of your needs. Worry about the look and feel once it's all up and running.

I've only just discovered that plug-in, will be looking into it myself.

There are probably plug-ins that allow you to add more fields to the registration.

ok ive added all the categories but not sure how to make them show on the front end

They'll only show up if they have content.
