New ways with mixed veg

It feels like I always prepare vegetables in exactly the same way and this is now becoming uber boring. I normally take diced mixed veg (onions/marrows/carrots/butternut/etc), coat lightly with some olive oil, and grill OR I cook them in chicken stock or simply a litle bit of water.

In what other way can one prepare mixed veg?

try and do fresh veg and not frozen...

oil
2 cloves garlic
onion
tomatoe
mixed veg
tumeric power
masala
black pepper
mixed herb
coriander
salt

add oil, half an onion diced with garlic braise with a dash of black pepper, mixed herb and spices.

add mixed veg + tomatoe chopped.

salt... a hint of sugar ( sweet+ sour depends on taste needed)

cooking time should be between 20-25min.

throw left over diced onion with 5min to end time.

garnish with fresh coriander.
 
throw them in batter and deep fry it (well you did not say a healthy alternative!)
 

Well why not just pick one and make an entire side dish out of them, or a few side dishes? I don't like mixed veg for the most part unless it's roasted with some acidity and sugar in the oven. Problem is they all cook at different temperatures...

Can you please elaborate on the acidity & sugar part?

Vinegar and I usually add a little sugar to help caramelise the veg before it overcooks - or just use balsamic which is just normal brown vinegar with a sugar reduction. Most veg contains a lot of sugars but they take some time to be released, and requires the breakdown of their cell structures, which results in sloppy vegetables...
 
I love the veggie dishes at the Krishna temple.

* potatoes cooked with tomatoes and baby marrows. Some spices..tumeric, chilli, cumin etc
* Butternut and spinach with ginger and chillies oh and mustard seeds
* Mixed veggies where majority is cauliflower and some pineapple. NO clue what spices they use cause it taste sweet and sour.

Scrap the cherry tomatoes in favour of small tomatoes on the vine. Tomatoes actually have no aroma on their own. 99% of their aroma comes from the stems, so cooking them on the stems adds a huge amount of flavour, considering that flavour comes predominantly from the olfactory bulb, behind the nose. My suggestion would be to cook the veg at a low temperature for about an hour - probably around 140C and then crank on your grill for the last few minutes to caramelise them...

Awesome, I've never been this excited to cook veggies. Will give it a bash!

Indians in my experience utilise veg the best. They really know how to cook 'em. There are so many Indian vegetarian restaurants around the world...

I reckon the Chinese can give them a run for their money. Authentic (non-Western) Chinese food is masterful with veggies.
