Okay, so I found a way to manually reflash an N8 using Navifirm and, get this - Nokia Software Updater!!!
This method replaces Nokia's files with your own files (including customised files), downloaded with Navifirm.
1) Install and run latest version of Navifirm
2)Locate files for your phone model, and download all
3)Save downloaded files into a newly created folder.
---- Note: I used NSU version 3 (beta), for downloading updates ----
4) Run NSU. Allow it to start downloading the 'latest' update for your phone.
5) Copy the files you downloaded into "C:\Users\[username]\AppData\Local\Nokia\NSU3\NOSSU2\variants\Products\rm-596\"
6) Now, disable your internet connection, leaving the NSU running as normal.
7) NSU will say updates are ready to install bla, bla, bla..
8) Follow the instructions on NSU.
9) You should now be done - with a newly flashed Nokia N8.

I did the above, and have posted exactly what I did.
It worked perfectly for me. I now have PR 1.1
