20 mm Diamond hole drill in a variable speed drill makes a very neat hole without damaging the membrane, or the piece cut out.

with normal eggs I fold in some crumbed feta, for the salt and to moisten the end product, because some people don't like/tolerate runny eggs very well.

I like this. I think I'll go with your idea. Fry some onions, add some ham and chorizo, add the eggs and crumb feta over before serving with the freshly baked bread. Maybe add some chakalaka on the side with a few chillis for bite.

Beat ostrich egg very well. Add 1 cup water and beat again - prevents egg from getting too dry when cooking.
Salt and pepper to taste. Braai/fry in butter - margarine at a push, NOT oil.
Serve with coarse homemade brown bread.

Just make sure you use an electric whisk - not a fork
 
The egg in that video looks seriously undersized if it would fit in a mug. The one I have from yonks ago is 37.5cm around its middle and 40cm around its north and south poles. We always made holes at both of the poles, made it a lot easier to get the egg out. As I recollect, the egg had quite a strong taste, a bit like a duck egg, so you need plenty of flavouring to disguise this.
