Any of you cook it regularly and are there any special tips/tricks you have ?

Ostrich meat is very nice. I love those ostrich burger patties you get, makes very yummy burgers.
 
I think the world understimates the value of this overgrown chicken. almost 0 greenhouse gases (unlike cattle)... they are birds.. so you can argue the whole "humane" point... plus... its the healthiest terrestrial meat there is.
 
Nothing beats a good ostrich steak on the braai. Fantastic meat and they don't need the fat for flavour - they have a ton of flavour already...
 
I love ostrich meat. Generally found the steaks to be my favorite though. Just dont overcook it!
 
I really like the steaks; in many ways, better than the average beef steak.

We always add some ostrich mince to our hamburger mix. Adds some really nice flavour.

And the ostrich fillets from woolies are to die for! pitty about the price!
 
I love ostrich meat. Generally found the steaks to be my favorite though. Just dont overcook it!

Because it contains almost no fat, the meat tends to get dry very quickly, therefore it is best to cook it medium rare. I agree, the steaks are great, but about 2 years ago the price just shot up like crazy. R90 now for 500g of steaklets in SPAR or P&P, that's like R180/kilo. And I thought beef fillet was expensive.
 
I like the ostrich burger at Kuai
But also like ostrich steak, but dont tell that to my ostrich :p
 
Ive been eating Ostrich fillet steak for years now and its bloody fantastic! :)

take it out the packet, rinse off the blood on the outside. Pat dry with a cloth and place into a dish with Olive oil. Add generous portion of ground black pepper to taste.

Keep a small pot with salted garlic butter on the fire, and baste that baby NON STOP!! If your hand is still, baste some more! :D

Ostrich medallions medium/medium-rare in a nice marinade or just a little oil and black pepper is really nice.
 
A lovely meat, enjoy !

Pot of Pterodactyl

ingredients
ostrich fillets
onions
carrots
garlic
fresh thyme
olives
some butter
a nice mature red wine (merlot/cabarnet)

Method
- put some oil in a pan, heat decent pan or pot to medium heat
- pat the fillets dry, rub with some barbecue spice, put them into the heated oil give them a quick sizzle on the outside to seal, and set them aside
- roughbly chop 2 or 3 onions, and put them into the pot
- add some butter, let the onions get nice brown
- put the fillets back in the pot
- add 2/3 chopped carrots
- add a good handful of dark olives - pips removed
- add some garlic to taste
- add the thyme
- add just over 1/4 bottle of the good mature wine


Let the pot simmer for about an hour or till you think it's ready.
Serve with rice

Ostrich meat has no fat? The mince and the burgers and the sausage is mixed with animal fat to make it more moist. I had a butchery and know that any wild meat must be mixed with pork fat or any other fat or it will dry out quickly on the fire.
Also beware of chicken worse. We were the first to make chicken worse and sold it to Woolies years ago. To make it tasty and juicy, we had to add some skin with it. Otherwise it is too dry. Ja, we also had to add colouring powder to the mince as it turns gray within an hour. All mince turns gray as the blood seeps down.
One more tip. Mince or any other meat at, say R50.00/kg wrapped and packed. You are paying R50.00/kg for the packaging and the wrapping. This was good for us as some meats like sausaties are saturated with sauce and wrapping that you pay for at the price of the meat.

It's probably more accurate to say that ostrich mince contains LESS fat than beef mince.

And we do use it quite often instead of beef mince!
