Yeah, I expected you to say OWA sucks....it does.

But for the situation, it does the trick. Still not sure why your sent items keep updating after it was done.
To be fair, if you create a new profile and it still happens, you will have a bigger issue.

Delete the .ost file and let it recreate one.
