secondly the chances of getting it nowadays is slim, it was more common in the old days when pigs were left to scavenge on farms and ate other infected animals.

True, but I would only recommend it for very fatty meats, especially if the chef is inexperienced. Skaapboud, duck, eisbein etc. Chicken and beef fillet gonna need some skills and monitoring.Works great for various of meats if done correctly.
