By default that they are canned... shouldn't they be anything added ?

Brine, salt, other E[insert number]....

They're pasteurised to kill bacteria and tomatoes have enough acidity to keep them fresh on their own...
 
Most Indian women learn to cook from their mothers, so when Mum says use fresh tomatoes...you use fresh tomatoes :p

And I'd agree, if it wasn't for the fact that most tomatoes are completely unripe, which is why they last. They are bred these days to turn red without ripening. If it wasn't for this, they'd only last a few days. For this reason, they have hardly any flavour and do not resemble tomato flavour at all. You're better off using canned tomatoes where they use real, ripe tomatoes. Unless you're going to spend a few hours reducing a tomato sauce to use instead...
