I have a pizza oven at home, and I wholeheartedly agree. Every time we have a pizza night at home it makes me wonder how so many restaurants can stuff up their pizzas. It's not rocket science - assemble ingredients and bases, get oven hot as hell and cook until the bases are crispy.

Yip, even if you do not have a proper wood fired oven at home you can still make a damn good pizza, it's not as good as wood fired though. The trick to using a normal oven is to pre-bake your bases until they get light brown spots on them. Remove and let cool down on a rack and they will go very stiff to the point where they might break. Next apply your sauce/topping/cheese and put it back in the oven. You'll end up with a nice crispy base that does not flop over, does not get soggy, has the slightly blackened edges. The dough I prepare 24hrs in advance, put in fridge & let the yeast do a bit of magic.

The other issue with pizza places is their toppings are prepared way in advance and you might end up with 'old' toppings, they lose a lot of flavour if you let them stand too long, oxidation is a biatch. Fresh toppings makes a big difference
