Potjie for Christmas

I rarely would use wine in any cooking, not for me. Trust me on the salad dressing. One bottle for every 2kg of meat.
I have used salad dressing over a springbok leg before. I let the leg marinade in the salad dressing 24 hours before cooking.
 
I still rate Vlakvark is the best for a Potjie. It just that perfect flavour combination of game and pork... Soo good. Oh man i'm craving that now. Dammit
Oh yes, vlakvark is great. Even Kudu make for great potjie. Oooooh, maybe I should change my chicken pot to something else this coming Sunday.
 
Another thing I've noticed, I got one of those enamel coated potjies which is nice but it doesn't brown the meat properly (at least looks-wise) so I now have to pre-sizzle them in another cast-iron pot or in a pan.
 
I checked with local butcher. They struggle to get. Will try tomorrow again. R190/KG I think?
Some of that weight is bone and marrow unless you specifically ask them to debone it for you. Just keep that in mind. It always looks big until you start eating it.
 
Good point. Will be with bone. Lamb is crazy expensive here.
If you can get your hands on mutton, it would be cheaper and taste better but you'll need to add around another 2 hours of cooking time.

The good thing about cooking with bones is that it adds more flavour

Jir, is that what lamb cost, or is it just in the midlands? I bought a whole sheep for R79, the other day. Massive "skaap boude" on that one. I generally don't do lamb, tjops is too small.
