It is done and delicious.

One final stir to get everything covered and mixed. Meat is soft. Root vegetables can be cut with a spoon but offer the slightest resistance. Green beans are warm but crisp and mushrooms are just right. Sauce is thick and moarish.

Right. Process is a go.

Meat was browned.
Onions sweated.
Garlic given a light color.
Flour was allowed to make an appearance.
Paprika, salt, pepper, cayenne.
Red wine reduced by half.
No soup powder in sight.
Stock mixed with curry powder, strong chutney and woester (yes, that how you spell it) sauce.
Couple of bay leaves.
Some Pickled onions.
Some tomato paste.



It is glorious and I could just sit and the sauce with bread as is for the rest of the day.

Im a bit late to the party and tend to be more traditional with poitjie.

Things that make a big difference for me are:
Brown the meat properly.
To get a nice sauce finely chop a portion of your potatoes, onion and tomato. Dont just cube it all.(change the ratio based on the rest of the ingredients, a hearty potato heavy sauce isn't always the right choice. Sometimes a more acidic tomato base is better)
Add the ingredients based on what you are adding. Ie don't add green beans at the same time as the potato or base it on the cut of meat. Neck needs longer than riblets.
Get everyone drunk while the pot is going.

I didn't have butternut, I think for next time I'll add that. For now, just lamb, onions and tomato, garlic and a Lil spices, carrot, potato, mushrooms and mielies.

Oh and decided to try the Greek salad dressing a few mentioned.

Slow cooking until 6pm which would make 4 hrs.
