The salt or vinegar thread got me hungry.

How do you make slap chips at home? The type you buy at the corner cafe in CT wrapped in paper.

Eish, the craving is really bad.

I think that is almost impossible to replicate at home. It is an art .... it has to be *just so* and I still wonder how they get it right!

For the real slap tjips...

They use frozen chips.

Allow to thaw completely.
Pre-cook for about 5 minutes.

Allow to cool

Deep fry in hot oil...
Drain on paper towel.

What's the diff between slap chips and regular chips you get at restaurants.
Ever ate wrap it up chips?
Don't think so.
@Helghast: fish 'n chips for about R25 from Neal's. The shop is in Neal Street, Sidwell - right across the road from the big ass Telkom tower. Ask for plenty of salt and vinegar!

When my mom owned a take away/ restaurant years ago, the chips were chopped every morning and kept in a large bucket of water till an order was placed. No frozen chips or par boiling. The trick is giant "chipper" potatoes.

Restaurants are too scared to put oily food on a plate!

are the chips you get with fish and chips slap chips?
definitely! and wrapped in plain white newsprint paper...

Correct - see my next post about "fresh" potatoes.

My wife and 14 yr old daughter make it like the shops. Get the oil boiling. peel spuds and wash them then cut them with a chip cutter then dry them and dump them in the hot oil and wait till golden brown. We often eat chips on bread at home with cheese or spread cheese.
