Slap chips?

Thread necro.
I want to make some homemade slap chips.
I think the secret is cooking in low heated oil with plenty vinegar?
I usually buy precut or I end up frying till crispy because they're quite thin when I use a cutter.

you cut your chips

then place it in the freezer to cool down. don't freeze it
then add it to super hot oil...super freaken hot
 
What I do is put the freshly cut chips in warm water for a few minutes, then dry it off and pop it into the pan to fry for a few minutes. Once they rise to the surface, take them out, place roller towels on a plate and place the chips in there. Wrap it up so that they chips can't breathe. Let it moisten for about 10 minutes and take it out. Then add your salt and spices.

That's what I used to do. Now, I just buy those ready made chips but I follow the same process.
