Slap chips?

faarksteaks.... now we're having fish and chips for supper tonight!! Seri-ass!

Used be a place down the road from me as a kid that made the best slap chips you could ever eat. Heaven
 
When my daughter was made permanent at WP Rugby we celebrated with a parcel fish and chips and vis kuite from the fisheries in Athlone. I am so glad I don't eat vis kuite.
 
I asked the fish and chip shop downstairs from where I live how to make them. (No, I cannot smell them at all :) )

They told me that they fry the chips until soft but without browning them, then take the chips out of the oil and leave for the oil to drain. +/- 5 minutes. Then put the chips back in the fryer until the desired colour.

I have one of those small deep fryers at home (got it at Game) and have been able to get slap chips every time by following their steps.

I think the big thing is the deep fryer is able to give a sustained temperature where a pot/pan does not.

Sprinkle with powdered Parmesan cheese and a few drops of lemon juice. Yummy ;)

Any chip will do, big fat chips you have cut yourself, fry them in a medium hot oil - not too hot, like for crispy chips. Place the chips in the centre of a newspaper, add vinegar/salt, quickly wrap the chips well in the newspaper, before the chips cool down, let the packet rest for 5-10 minutes.. perfect slap chips. ( slap chips secret is in the steaming whilst wrapped)
 
Wife loves slap chips I like nice crispy ones.

I reckon wrathex solved my problem and I'll also use the method mentioned by Nick333 to prepare them.

Maybe there are other methods, but the way ive found it to work best is to use "cold" oil, not cold cold but when u put the chips in the pot the oil mustnt be boiling hot, must just be heated and the chips mustnt go crazy when you put them in! Works best for me!

I want to make some homemade slap chips.
I think the secret is cooking in low heated oil with plenty vinegar?
I usually buy precut or I end up frying till crispy because they're quite thin when I use a cutter.
