I'm on Telkom's uncapped LTE package (pretty awesome by the way) and am looking to hook up the router to my PABX (Siemens - can't remember the exact model number now) for VOIP. Who'd be the best VOIP provider to use?

Why don't you head off to www.whichvoip.co.za and take a look at the providers which we have listed on the site.
You may want to try and find a VoIP provider that has tested integration with the Siemens PBX which will avoid headaches during installation and integration.
Good choice though, VoIP is awesome and there are plenty good providers out there.

Thanks for the feedback. How would I go about finding a VoIP provider that has tested integration with the Siemens PBX (HiPath 1150)?

I think that question is best for Nashua who distributes the Siemens platform. Obviously ECN is approved, and I know of TelFree who did some testing at one stage with the HG1500 (VoIP card on the HiPath). I noticed you are in Hatfield - get in touch with SPOC in Centurion who is a good Siemens reseller and support company - I am sure they will help you.
