Coconut oil is interesting. It has a reputation for assisting weight loss, but if gavaged in to the stomach of a chow fed lab rat it will decrease blood glucose and increase blood insulin levels. You don't want to increase your insulin levels if you want to loose weight. There are other plus and minus sides to coconut oil, but I'd keep life simple and avoid it.

To be honest, I've gotten most of my recipes of reddit.com/r/ketorecipes/.
Sometimes they call for ingredients Ive never heard of in my life and other times the recipes are stupid, but most of the time I find them great.
Another great source for low carb recipes is www.ruled.me tho I find those recipes expensive.

I get my shirataki noodles from http://www.superlitenoodles.co.za/ theyre the cheapest Ive found, R25 a pack. We only eat that once or twice a month tho.
My favorites are the fettuccine and angel hair. The rice is meh, and do yourself a favor and dodge the lasagna altogether.

Reagrding the microwave muffins, my wife usually mixes up a tub of the dry ingredients so that in the morning all we need to do is measure the correct amount and mix it with egg and nuke it for a minute.

Chicken Cordon Bleu thing... this is a bit more work but its worth it. Its my favorite way to eat chicken breasts.

Youre going to need: Chicken breasts, streaky bacon (at least two strips per breast, more if you have), toothpicks and a filling.

Filling:
Jalapeno, Cheese & Bacon:
Cheese (I like to use white cheddar for this, but mozzarella or normal cheddar works too) Jalapeno's (Makro sells pickled jalapeno's in a large jar for a decent price) and bacon.
Cook the bacon and cut it into strips, chop the jalapeno's (remove the seeds if you only want it a little hot, leave them in if you want it to bite) and grate the cheese.
Mix it all together and pour the bacon fat into the mix (We need the fat to up our fat intake).

Feta and spinach:
I buy fresh and generally stir fry it. the key to getting a sand free spinach is to chop if first and wash it in a basin full of cold water use a salad spinner to dry it. Rinsing it under running water just doesn't cut it.
I usually fry it in a little coconut oil. Ive been using coconut oil since I started without any ill effects. Recently I found some parmigiana infused olive oil at food lovers marked and I have been using that. Its awesome.
I have also made a creamed spinach to put inside it in the past, but I prefer it fried.
Once its cooked I crumble the feta into the spinach and use that as is.

Ive also tried various other fillings: creamed mushrooms, roast veggies, a pepper sauce mushroom thing I did, but the ones above are my two favorites.

Next you flatten the breasts. I usually cut the little extra loose piece off and flatten them separately but leave them on too I suppose. Lay them on some cling wrap and then cover them with more cling wrap.
If you have a mallet then use that and gently hammer them flat. I dont have a mallet so I use a heavy beer glass and I gently hit them with the bottom of the glass. I used to use a rolling pin, but I find the glass works better.
once theyre flat (around 5mm think) I take them out of the plastic and do the next. The small off cuts I make a little thinner.

Now for the filling: I try and do the last step directly on the grilling pan because moving the packages once they're made can lead to them unraveling. If I'm making a lot tho I usually do the last few on a board and slide them in.

First you lay the bacon out in an x. If you're using more than two strips just make a star, you're going to be pinning the lot together with the toothpick in the end.
Lay the flat chicken breast on top and put the filling in. The chicken breast needs to close ontop and basically seal around the filling. Once the first part is wrapped I usually put the small off cuts over the top of the package at this point.
it seems to help seal it together. Then I close the whole package with the bacon and pin it all together with the toothpick. Or a couple of toothpicks if the breast needs it to to stay closed.

Stick it in the oven at 180 for about 1/2 an hour until cooked and the remove the toothpicks before serving.

Sorry I don't have proper proportions, but tbh I just eyeball it 90% of the time.

Tried some improvisation tonight. No oven at the moment unfortunately so I created the 'Braaiza'.

Already posted and as far as I'm concerned more of an opinion piece than actual science.
well either would be better than sunflower oil :p

Since I've started with the LCHF eating....I've made such big changes in going cold turkey on the obvious bad products that small differences between the "acceptable" products doesn't bother me too much. The overall improvement is enough to make me go...whatever

It's quite possible MCT oil in general (including Coconut) is responsible for elevated insulin. Now that would put a spanner in a bunch of therories. I'm ready to switch this diet for a fruit and veg one. I miss fresh fruit.

What I thought as well. The meatza is just too much meat

14g carbs / 100g in apples. 1.5 apples is half your daily carb allowance.
That's not quite what I had in mind for daily fruit intake.

Page 48 of the RMR book says 1.5 apples are your carb allowance for the day!
