The Banting/LCHF Thread

I almost failed yesterday, going into the butchery, they also have a bakery and fresh produce in this awesome butchery. Well they had freshly baked vetkoeke and all the bread freshly rolled out, my goodness the smell was of heaven, I stood in front of the vetkoeke for about 5min lost in desire. :( week 10 = 16kg down. 9kg till goal...

Hmph some days my wife can be mean ( unintentionally ). She recently got a batch of premixed dough for cone rolls, croissants and muffins. Bakes herself some every now and then and the whole place just smells like baked bread. And then she eats it on the couch next to me.

All this talk of bread makes me want to make banting bread... but I don't want to buy almond or coconut flour because I'm a cheapskate :(

lol, I know the feeling. Luckily I can get whole almonds and make my own flour and you only use a little coconut flour so it goes a long way. I make a seed loaf and 6 buns every 2 weeks, it's just enough to keep that craving satisfied :)
 
Bought banting bread at WW yesterday and it tastes exactly like the home made loaf.

WW call it carb clever and it's with their gluten free range. Best to wrap individual slices in wax paper and freeze on day of purchase, that way you can enjoy a slice whenever you feel like one.
 
(Bread craving) crisis averted, for I have made beer can bacon burgers and they were good. I regret not trying this sooner.
 
Hmmm, my weight loss seems to have plateaued for the last week or so. I believe still going down as waist is still decreasing but weight number not adding up yet.

So I've been experimenting trying to make... sunflower seed flour bread :D As the name suggests, you take sunflower seeds, grind them into meal/flour, then use them as the main ingredient in making bread. Recipe here.

The best part: sunflower seeds cost R50/kg compared to R350+/kg for almond flour. The drawback is sunflower seeds have 11g net carbs/100g (according to the brand I bought). I stand to be corrected, but this works out to about 3g carbs per slice (so 6g per sammich), so unfortunately you probably shouldn't try and eat an entire loaf every day ;)

I've been experimenting with the recipe, and my loaf pan is too big, so my results are really flat/short. I cut them sideways instead.

Any of the seed/nut/alternatives that I've been using, I only make buns with ...... the flat loaf thing was getting to me :D
