Got my biltong maker and have my first batch drying as of midnight.

I bought more meat than I should have (3.7kg), do you guys buy just enough to make or do you buy bulk and freeze?

Is there a taste difference in the frozen meat?

Cut all the meat up, leave aside 3kg meat (1 kg Biltong) for marinating, freeze the balance in 3 kg batches that you can just defrost a day before marinating etc.

biltong does not have a taste difference, fresh vs previously frozen meat.

In the past when I have bought a 4kg roast I have cut it in half, made biltong out of one halve and frozen the other as is... When wanting to make the second batch, take out the freezer defrost (slowly) then carry on as normal...

I just pan fried a tenderloin biltong ( half- cured ) drenched in farm butter. It is sooo good!

Anyone tried using their exact biltong recipe for steak marinade? I'm gonna give it a go soon. Still waiting on some c-grade topside for my next batch.
 
I believe that you can freeze biltong. need to avoid freezer burn though.

I bought biltong before from a friend after he went hunting. They would go through the whole biltong making process. Hang it for 1 day, and then wrap and freeze. They would wrap it in newspaper, but brownpaper could possible be a better option. I would buy it, hang it, eat it. No problem :)

Ek sien van die manne sê silverside proe anders as topside het jy al so iets agtergekom? Ek het nog nooit dit probeer.

Nog nie topside probeer nie.

I don't care to change my meat at this stage. Silverside works for me. My last batch I added some brown sugar and Worcester sauce, and it was a nice change from the normal salty taste. The sweet taste made a nice change. I have a piece of silverside waiting in my fridge for when I get home. :D

Brown paper, or that paper that they wrap fish & chips in. I think the ink on newspaper could have a negative effect on the biltong.
 
I have tried both topside and silverside. for a long time now I have been only using silverside to make my biltong, so have actually forgotten the taste of topside biltong. must be a reason why I prefer silverside, however I think my next batch will be topside.
I can't understand why topside mince is so much cheaper than topside roast.

I've had plenty biltong wrap in newspaper. I'm still alive.

because topside mince is not just a topside roast minced.
