May have found a supplier for c-grade silverside in JHB. I phoned the City deep meat market at the Johannesburg produce market and they say they have at R55/KG apparently. Now I'm hoping they were being honest but I'll see when I get there I suppose. I really hope this works out because I have contacted tons of butcheries with no luck. Even tried contacting the abattoir near Krugersdorp today but no one was answering.

I'm here now. They ran out of the silverside but he agreed to give me rump instead at the same price. So after this batch I will arrange with them again so they keep some for me aside. Just note it's on the different side of town inside the Johannesburg fresh produce market.

I have found a source of C - Grade silverside. Its going to cost unfortunately. Its grass-fed beef, picking some up next Saturday at Braeside meat market in Parkhurst. 011 788 3613.
Will report back. know its going to cost an arm and a leg but it should be good.
 
I bought about 15 kg of topside, I wanted to buy silverside as that is my preferred cut when it comes to making biltong, however, topside is ok. I have noticed that topside seems to dry quicker. after two days the biltong is just right. With Silverside its about 4 days. I don't use any heat source when drying the meat, just an extractor fan.

I also already phoned breaside and they said they can't source c-grade silverside. Odd.... These guys from yesterday can definitely get c-grade silverside they just happened to run out by the time I got there. I spoke to Nathaniel and told him next time I'll arrange on the Monday and collect over the weekend. The rump I bought is also c-grade...So nice and fatty with nice marbling on some of the meat. Also at R55/kg I'm willing to give it a proper go. Processed the 7.5kg last night and it's hung up drying as we speak.

Only been hanging for a few hours now. You will see one of the bits of fat looks red (like blood) but that is just the red vegetable stain which as far as I know according to Samanthas earlier post confirms the grade of the meat. (AFAIK)
 
i was going to ask how to make those biltong wheelies but now im scared haha

That's about 10 kg of biltong. that's alot of meat.
