The bulb does nothing to the meat. The bulb dries the air out, and then science happens. When the air is dry, and the meat is wet, the moisture gets "pulled" to the surface of the meat, the fan, which is supposed to blow, not suck, then dries the outside moisture.

It's been a while since I had an unmodified mellerware box but does the original fan blow?
 

That would explain why I'm getting a far fewer number of those little bugs flying around in mine since I changed it to draw. I've also got the vents at the bottom screened off.
 
Anyone here buy c grade silverside recently..? Prices have climbed like a rocketship :/
