I had the same question! Also wanted to ask if anyone has a lekke Chilli bites recipe?

Been struggling my moer off to get a bitlong dryer or even PC fans to make my own. Had a biltong dryer on orde from takelot a week before lock down started, it got cancelled and then re scheduled for delivery and now again cancelled:mad:

Maybe try cancel your order and re order. I ordered the sunbeam biltong maker from takealot on the 12th of may and it was delivered before 8am on the 14th of May.

Side note the sunbeam machine fan is loud.

Does anyone know how to avoid case hardening. I have had biltong in the sunbeam machine for about 3 days the thinner pieces are hard on the outside but red on the inside. I like this but am worried about the thinker pieces that the outside will over dry and the inside will be raw
 
From soaking in brown vinegar, hanging for about 90 hour to eating.

Looks nice. What spice did you use ? And only brown vinegar ? Add some Woestersous.
My next batch will be a mix of Worcester sauce and brown vinegar. I used a crown national pre mix biltong spice because I could not find coriander seeds. When the premix is finished I will make my own spice mix using coriander seeds, pepper corn, salt and sugar.

The Mellerware Biltong King Biltong maker and food dehydrator is R399 @ Game, just bought one. Was considering doing a DIY but for 399 it comes with everything and a bit more like the racks for food dehydrating so i can make more snacks for my kiddo

Check the spice racks at Woolies or other grocers, I got whole coriander seeds in a spice bottle from the spice racks

I am going to add chilli flakes or a similar spice to my premix. If you want something fresher get chilies and put them in a food processor when you make your spice mix.

I see some guys looking for recipes from scratch so ill share what im planning to use for my 1st try:

This is based on a combination of a few other recipes ive seen around the webs and the Chilli bites is the same recipe, but added Chilli sauce in the soak and chilli flakes with some Curry in the dry spice side.


(Per 1KG Meat)

Traditional

- 18g Salt
- 2g Black pepper
- 1g Brown Sugar
- 4g Coriander
- 1g Crushed Garlic
- 0.5g Bicarb
- 50ml Worcestershire sauce
- (BBQ or Texan Rub optional)
- Brown Vinegar / Apple cider preferred but Redwine vinegar will also do

Chilli Billi
- 18g Salt
- 2g Black pepper
- 1g Brown Sugar
- 4g Coriander
- 1g Crushed Garlic
- 0.5g Bicarb
- 50 ml Worcestershire sauce
- 1 Tsp Ma Dolly's Dynamite Sauce (add in the Vinegar soak)
- ½ Tsp Paprika
- ½ Tsp Chilli flakes
- ½ Tsp Hot Curry Spice
- Brown Vinegar / Apple cider preferred but Redwine vinegar will also do

I buy the chilli bite mix from crown or Freddy Hirsch. But it's not hot enough. So i've dried my ghost chilis in that same biltong drier and chopped it fine in a crusher attachment on the blender. Add a little bit of that to the pre mix spice and BURN. There's a nice mix. Also previously chopped fresh Jalapenos in the blender and added it to the meat when left overnight with some vinegar and spice.

just be careful i went the diy route cause that thing had terrible reviews on takealot just way to many neg reviews and issues. Was happy to build my own for under 200

seems like they deleted alot of the neg comments... hope its ok for you

Yeah I saw some of those, Most bad reviews I saw was people saying the Fan breaks down, Thats not a problem for me I have about 12 PC fans I can use to replace with.

But I must say im very happy with mine all round. Fan is quiet, Its solid and parts look like decent quality for what it is plus its lekka compact for my needs and isnt an eye sore in my kitchen.

Im happy I took the mellerware, my friend has the sunbeam drier and it looks more flimsy to me plus he says the fan is very noisy.

With this said, I can see I will need a bigger one in the future :ROFL: :ROFL: so later I will probably build a bigger one myself

Boy was I wrong!!!
This Little Mellerware box is too small now:ROFL: my 1st batch did not even last a full 24hours.

So this is to give my opinion on this R399 mellerware VS a DIY box. JUST BUY THE STUFF TO DO A DIY BOX, you will regret not just doing this from the start as soon as you realize the Mellerware is too small... even for home use :laugh: :laugh:

You have been warned :laugh: , just like I have. dont ignore it just like I did.

I have a Biltong King that I fixed by replacing the original fan (which died) with an old PC fan, but I haven't used it in a long time ago.
But i guess my question applies to any biltong dryer...
Which direction should the air be blown if the fan sits at the top (on the lid) of the dryer?
Should the fan blow air downwards so the air leaves through the vents at the bottom? Or, should it pull air from inside the dryer and blow it out the top?
Does it even make any difference?
Also... The light bulb socket was originally at the top... If i wanna move it to the bottom, will that affect which way I need to direct the fan to blow.

I've had one for 5 years plus now, only issue is that light bulbs don't last forever, had to replace it a few times.

I've just made some biltong in it. Rump and Ostrich steak was R99 a kilo at Foodlovers.
