The Official Biltong Enthusiasts Thread

If it tastes like **** I'll give it to prismo, hear he has been begging biltong on another thread :D also, I have a new favorite sauce. I wish I could make biltong in this flavor.

That sauce is lekker. There is also a garlic one which is great on burgers.

But will it biltong?

That sauce should never come near biltong. (or i have no idea what you mean)

if you want to use a "sauce" with biltong, do the following...

1. cut biltong in chunks
2. put some lemon juice in a bowel
3. add Tabasco to taste
4. gooi chunks in mix
5. heat that mix up in the microwave
6. serve with toothpicks
7. profit

Boerie still pink inside.
Need to warm the room up, been to cold. Temp ranges between 17c and 28c

and how's the humidity?
35 to 55. I'll stick a bulb or 4 on a thermostat in this weekend. Air intake and outlet are outdoor air vents. Lol, typical, set up drier on Saturday and washed car on Sunday. Been raining since Monday.

As promised, pics of the final result.

4 days with 60w bulb. The biltong is not quite as rare as it looks in the picture. Very very tasty!!

Finished my Biltong box project today. Wanted it without fans, and old style.

Basic design from here: http://www.biltongbox.com/biltong.html

I did the woodwork, Mom did the pewter and local glass shop did the door. Have put a few batches of meat through already, they were all consumed before photos could be taken. Will add some down the line.

It was un-spiced "biltong meat" from Food Lovers Market. I did the spicing myself as I have found their spiced meat a bit bland in the past when using the old Mellerware box.

Next time I will try to hunt down some of the Grade-C cut that was mentioned earlier in this thread.

so so good

what meat did you use ?

Correct, it also comes with hooks, which is handy. They have it on special every now and again at about R70/kg. In this instance I tried to find the bloodiest pack I could :) But, getting a roast and cutting it up yourself is definitely cheaper generally.

oh the biltong meat is pricey from FLM

something liek R90 a kg but its cut already and packed nicely

is it topside meat that they pre-pack for you ?

and yeah you can pick up a decent roast for +-60 a kg

i paid R55 the last time and im hoping that butcher has rump on sale for R50

i want to try rump this time

I really am not sure what the cut is, I will ask next time I am there and post back.

Where you based IdlePhaedrus?
Good luck finding C-Grade Silverside, best you speak to Zenbaas, I think he picked some up at the JHB fresh Produce Market.
