The Official Biltong Enthusiasts Thread

Here is a great boerewors/droewors recipe

Vleisland se LEKKERSTE Boerewors resep...
32kg vleis
8kg Vet
650gr sout
60gr Swart peper
50gr Fyn Naeltjies
50gr Fyn Neutmuskaat
300gr Koljander (Roasted)
500ml Woestersous
500Ml BRUIN ASYN
4 lt KOUE WATER...
Sny die Vleis en vet in Blokkies meng die speserys deur saam met die asyn en woestersous...maal dan alles saam, en meng dan die kuoe water lekker deur voor jy begin stop.
(Vir DROEWORS...los die Asyn, en die Water uit)...

OK, for that recipe I would have to build a biltong box pretty big! 32Kg vleis!?

For now I will stick with the 2Kg already sorted out droe wors from not so local butcher. If that works out as I hope then I will reduce your recipe to manageable levels :wtf: :D

PS, where do you get your casings from for this?

I share will all my friends be they furry or not. It mostly has to do with being in the right place at the right time, my Jack is usually spot on every time. My other friends not so much.

Same here. Our two cats always get some. Our boy cat always follows me to the biltong box when I go get some.

you guys give your dogs biltong?

fsck that schit... he can have my whole plate of food, but he's not getting any of my precious!
Nope - but somehow they know exactly what the schwoomp of the biltong cutter means and come a running - talk about Pavlovian…

o yes of course they do... :D

my mom loves eating sweets and chocolates... when the dogs hear paper rustling in the kitchen... same effect...

Not an enthusiast but after living in a foreign land for a while I just couldn't take it anymore.

Went to the one in Alberton yesterday. Nice little shop. Friendly staff. Bought some seasoning and chilli bite seasoning as well.:D That and some nice large containers for processing the biltong and eventually the boerewors...!

Just finished pepping 5kgs of silver side, will hang it later tonight and look fwd to getting back to it on my return from Nigeria :)

^Cool. Those pieces looks a bit mutilated :D Were you a bit desperate to get it into the drier?

LOL!

Dude, my choice of meat was very limited. I actually dont even know what that is. Just needed dry spiced meat and did'nt care what it was! ;)

Zenbaas, did you get a price of the sausage filler. They have some nice stuff in that shop. which do you think is the better option, separate mincer and sausage filler or the all-in-one? I think it might be the all in one.

When last did you get C-grade silverside at the jhb fresh produce market?

The price of the Boerewors filler :D was quite hefty hey. Even the small one was over R1k. I think the all in one jobbies would work well enough for hobbyists such as ourselves :D I will be buying the mincer combo for our Kenwood Kmix and seeing how that one works out.

As for the C-grade silverside I went there on friday after CONFIRMING that they would have by the time I got there around 1pm. Got there and guess what...? So after relaying my dissatisfaction in a tasteful manner I walked out. The gent walked after me and offered to deliver the meat to me himself but they normally don't do deliveries. In any case will be contacting him tomorrow to arrange and see what he says (Nathaniel again).

I even asked the guy at Crown spice if he knows who can supply c-grade silverside and he just laughed. I guess that right there tells a story.

So if you arrange beforehand if shouldn't be an issue but be sure to confirm with them 900%. (I was quite annoyed though because here I have all these nice goodies to use and no meat :()

Is there a reason you want c-grade beef?

It has nice yellow fat on the meat. It tastes somewhat different and you'll find it is what a lot of butcheries use for their biltong(some have no clue either). That said it's only for those of us who enjoy our fat otherwise normal a-grade is sufficient.
