I'll be very happy if they deliberately exclude themselves from government. Best possible outcome.
That's probably the idea, the ANC should have foreseen that the EFF would most likely throw a tantrum and go sulk at the back of the house, it's a win win, the ANC was gracious enough to invite everyone, some parties declined, others accepted. No one can accuse them of anything.

The police are part of national security, highly unlikely that will simply be given to the DA or any other party, you are more likely to get the deputy President than getting the police ministry.
As others have said the most likely thing is for the DA to push for parliament positions, if the wanted the police but know they can't get them, ask for the portfolio committee on police.

The same way the DA has been operating in the local governments where they used being a big party to get the important positions like mayor and finance, is what us going to happen here, at most it would be the deputy minister, which I think is a very useless position.

Why would the DA settle for a largely powerless position like the DP? The DA - correctly in my view - are aiming for the far more powerful Speaker position.

Any appetite from the DA for the Ministry of Cogta? A state of disaster looks very likely, remember how powerful NDZ was?

The Democratic Alliance (DA) says it will only agree to be part of the African National Congress’ (ANC) proposed government of national unity (GNU) if the uMkhonto weSizwe (MK) Party, Economic Freedom Fighters (EFF), and Patriotic Alliance (PA) are excluded.
“And on Monday, the Federal Council will have to decide; but even the smallest inclusion of those three parties, well, in terms of the current resolution of the federal executive, it will be very difficult, if not impossible, for us to be included.”

Who is going to be presiding on the election of the Speaker, Zondo?
Yes,
House must elect the Speaker from its members during the first House sitting. The house may remove the Speaker by resolution. The house must fill the position when it becomes vacant during term. Chief Justice must preside over the election of the Speaker.
