Once had a mysterious water loss on a CTI golf. Turned out to be a pin-hole in the welch plug. Evaporated before it hit anything to leave a clue.

oooooh ,check the heater core inside the cab .look for wet carpet or see if you can smell the coolant inside .alternatively block the heater pipes for a while and note levels

Did you check the coolant while the car was hot or cold? Because that changes everything.

There should be a label in your engine that specifies the type. Go with that one as priority, next priority would be colour matched, then adding distilled water, then water, then universal. At least in my mind.
