I'd like to use Ubuntu Server as a file server at my home office - I battle to find the correct information on how to set it up so that may use it through Windows XP, Vista or 7...any info or special links would be greatly appreciated.
 
If your new to the Linux scene then install the desktop version. This will at least give access to all the GUI features to set it up. Ubuntu 9.10 desktop is very easy to setup file sharing.

I've installed it on 2 netbooks for newcomers to the scene this month and the entire installs have just been clicky based. Even the SAMBA file shareing.
 
think you should install webmin, the first thing i do on all my linux boxes
 
thank you - this first the bit of positive feedback I got in a long list searches. It is not easy for a windows user to switch to Linux server or desktop. I would love to use the Ubuntu server, I've installed it on a computer, but that was about it - I got stuck and gave it up until later.
