Wayland will definitely not make it into Natty.
One change that will that isn't mentioned is that Banshee will replace Rhythmbox.
The biggest change will of course be unity. I expect it will be much faster than 10.10's version, as it is using compiz.
Regarding innovation. I have to say that Ubuntu are being highly innovative at the moment. There's Unity, Wayland, talks of moving to LightDM instead of GDM, Ubuntu One etc...
What Ubuntu have changed, is that they are no longer sticking to the run Gnome / KDE paradigm, but are systematically changing the desktop, into what they believe will be the best user experience.

You couldn't be more wrong. It just wouldn't be as popular as it is now. Which has never been the intended goal of Linux.
of those i believe Unity and Ubuntu One are the only Canonical projects. Unity is almost a Gnome Shell fork it seems while it seems to me Ubuntu One is no more than Dropbox.
most other distros do this in any event.
