I plan to go to Europe and want to use Uber quite a bit. Will Uber charge me any additional conversion rate fees and admin fees if I use my SA credit card.

Never had any issues , just a huge bill.
Shouldn't be any different to using it here.

No additional fees. They charge it to your credit card in the local currency (Euro, for example) and any conversion fees or extra charges you pay is dependent on your bank and credit card.

Worked fine for me. Rates were the same conversion than if I swiped my card at POS (i.e. what ever bank charges as standard).

If you use a local sim in your phone where you are, be sure to create a new account (if you can, with unique e-mail) and then you can qualify for the "first time user" vouchers with free or discounted rides. I also registered for Lyft in the US (not sure if they are in Europe), Also got 10 x $5 rides free there. Was pretty handy getting around to tourism spots :)

Thanks. Think I will try that 1st time promo if they don't check for existing credit card number.

Just a word of warning, I used my credit card for myself and my sister's account, as soon as Uber saw the same credit card used by two different accounts, they froze everything and it was a long mission to sort out. It may or may not happen to you if you try to make a new account for a free ride, but perhaps it's not worth it for one free ride.

I didn't change anything, just used it in the USA as if I was here. No problems.

I only had SMS roaming, but there was no need for calls, just worked.

That is strange, all 3 of my kids use uber linked to my credit card in addition to my own account, never had an issue with it. In fact, uber allows you to create a "family" profile on your account where all the other users are visible.
