Decided to make an extra effort on meal choices, gotten very static and boring lately and when it gets boring you tend to start feeling cheaty, heh. Had some 'potato' cakes (cauliflower) last night with eggs, steak and pumpkin fritters. So good, so satisfying![]()
Not much of a recipe, winged it but -
Grate and boil the cauliflower
Drain and add butter and cream cheese and some almond flour
Overnight in the fridge
Make patties and fry in butter
Cubed pumpkin
Oven baked with salt and pepper and herbs
Mash it with some butter
Overnight in the fridge
Make patties and fry in butter (I added a teeny bit of xylitol to the butter)
Make steak and eggs and nomnom![]()

One thing I am concerned about, is I have noticed a handful of people on a HFLC diet - their cholesterol goes down for a while, then goes back up somehow. Not sure why, so am getting blood test done tomorrow just to make sure I am in the clear.
