and a touch of MSG (it's not bad for you in the quantities we consume them as humans unless you have a sensitivity to the stuff).
Why do you add the MSG?
Because it's a superb flavour enhancer that works wonders with foods fried with white pepper and salt. I usually add it to foods that I've added flour and potato to, as both of those ingredients tend to mask other flavours. So this way I get the texture I'm after as well as the correct flavour balance...
Where do you get pure MSG from though? I've wanted to try it in food for a while but the idea of reverse engineering a Chinese takeaway was a bit daunting.
I think I will also go vegetarian tonight.
Tomato and lentil curry, oven roasted mixed vegetables .... yes, I think that will be it.
