no no, the bone should be there... just a little lack of meat it seems.

my wife slow cook these things in the oven, wrapped in foil, filled with feta, mushrooms, peppadew, etc :love:

no there was enough meat ..but they werent the biggest shanks

i saw a recipe like that...how long does she cook it for

Spatchcocked turkey, candied yams, roast parsnips and potatoes with various veg on the menu tonight.
 
Well I've gone meat free this evening and made a red lentil and jalapeño thing.

It's not too far from a curry but also far enough to be different.

Pretty quick and easy.

Of course I then went and brushed my eye with the back of my hand and seemingly the capsicum had spread even there. Eina!
 
Crispy grilled chicken bites on top of a spicy tomato mushroom sauce on top of a bed of baby spinach and cabbage. Feta as garnish :p

Got the chicken so nice and crispy that they almost look like crumbed chicken nuggets.

Wasn't that much. Both the spinach and cabbage was raw so they stacked nicely to keep height.

Once I mixed the hot sauce into the greens they collapsed quickly. Was about 1 and half smallish chicken breast for each plate. Sliced into nugget-sized bites while they were still half frozen. Easier that way.
