Deboned chicken gallontine a la Jacques Pepin, stuffed with mushrooms, pancetta and cheese. Smoked and served with an orange cream sauce.

Watch the video and give it a try. It's a bit more complicated for beginners, but watching him deboning the chicken with such ease makes the viewer confident they can attempt it and be successful.
 
Made tomato pesto and mozarella toasties for the family with the pizza leftovers.
 
Rub a piece of skirt steak with salt, crushed garlic, ground cumin and chilli flakes mixed with olive oil. Cook on a very hot barbecue for a few minutes each side for medium-rare. Remove and set aside to rest then slice thinly. Serve with a mix of crumbled feta, diced avocados, red onion, tomatoes, coriander and red chilli, well seasoned and dressed with lime juice.

going to try this tonight.
 
Making buttermilk pork schnitzel with...something, not sure. Maybe apple salad and caramelized carrots.
