You shouldn't. It's very easy, but can be time consuming. Next time I'll crisp up the skin, sous vide it, then crisp it up again. It didn't take on much smoke.

I deboned it myself using Jacques Pepin's method. Fairly easy, gets easier every time you practice.

Rub a piece of skirt steak with salt, crushed garlic, ground cumin and chilli flakes mixed with olive oil. Cook on a very hot barbecue for a few minutes each side for medium-rare. Remove and set aside to rest then slice thinly. Serve with a mix of crumbled feta, diced avocados, red onion, tomatoes, coriander and red chilli, well seasoned and dressed with lime juice.
