Joh! That sounds good. You make the wraps yourself? Why no pics yo>?
 
What's your recipe? Wife made a Jamie Oliver one recently, it was delicious.

Kept it very simple. Mirepoix, bay leaf, ginger salt and pepper, partially roasted chicken and roasted garlic.

Seasoned with some fish sauce and smoked tobasco at the end.
 
What is fish sauce?

Southeast Asian fish sauce is often made from anchovies, salt and water, and is usually used in moderation because it is intensely flavoured. Anchovies and salt are arranged in wooden boxes to ferment and are slowly pressed, yielding the salty, fishy liquid. The salt extracts the liquid via osmosis.

Amazing stuff. Use it in my stews and a lot of other dishes for an umami boost. Essential for most East Asian cuisine.
 
What is fish sauce?

Oh man fish sauce is essential. It is literally fermented pressed fish, so obviously it does have a strong fishy smell but it's highly salty and packed with savoury flavours. If you use it sparingly it adds an amazing background to a dish and actually doesn't make it taste fishy. It's originally an Eastern sauce but it's used a lot by modern chefs because it's a wonderful source of umami, as randhir said.

I have the Woolies one, it's pretty decent. We don't have an Asian supermarket here which is just balls :/
 
Cool. I needed some for that thai green curry coleslaw thing i made the other night, just skipped it. . .

If you get some it'll become a staple in your cooking. You know how you taste a dish and there's just 'something' lacking? A dash of fish sauce will sort that right out.

Are you familiar with the concept of umami? Do some reading up on it if not. It's an entire flavor profile that we're only beginning to understand; roughly speaking it's savouriness or meatiness. Fish sauce just adds an undertone of umami that totally uplifts the other flavors - like I recently did a mango chicken that would have been sickly sweet except that it was balanced with the fish sauce. It can be used in practically any kind of dish.

Was given 2kgs masa harina (corn flour for making tortillas). Now to put it to good use.
