So what ingredients did you end up using?

Hehe.

Fried some onion, garlic and red pepper until softened.

Cumin, paprika, chilli flakes and a bit of coriander for spices.

Then added chicken stock, tomato puree and cream before reducing to a nice thick consistency.

Seasoned with salt and pepper before serving.

Most of the essential ingredients for peri peri sauce are in his ingredient list. Only thing he's really missing is lemon/acid.
 
Well yeah but isn't piri piri a distinct chili, like Chipotle or jalapeno?

Probably when it started the sauce was strictly made with piri piri chillies, but the sauce is quite bastardised now and can be made any number of ways and still be classed as 'peri peri sauce'. A lot of recipes will just call for chillies rather than piri piri specifically.
 
Looks great. Personally just hate those soft Woolies rolls. Prefer a ciabatta.

They've definitely changed, and not like they used to be. They're more like fast food rolls these days IMO.

If I was entertaining I would go with ciabatta or something else.

Patties were good though, Woolies free range. About 1.5 - 1.6 times as thick as the normal ones.
