Yeah the enchilada sauce had black beans inside and I poured it on top.

There isn't really a single recipe, it was adapted from a number of places. For instance the tortillas were here:

Just looks like a frittata with a crust to me.
It's just not circular and ridged
. But a frittata is quite hard to distinguish from a quiche, like, I think it's pretty interchangeable.

Nice browning on the cheese. What kind of base?
Fathead base. (Mozzarella, almond flour and 1 egg)
