Dry aging small cuts was debunked by Kenji a while ago iirc.
 
Ok DJ that last pic made my mouth water. Omg that steal looks delicious in that pic. I was dubious at first with going through the pics but I'm sold. Yummy.
 
Lasagne & cheese cake for desert. Sick in bed with flu so it's takeaway.

A Chicken fillet with a small pocket cut into it stuffed with Mozarella, Sundried Tomatoes and Basil.
The black parts are the basil. :D

I also desperately need a new stove.

Hmm contemplating doing a Sous Vide rib eye in the slow cooker this weekend.

The cooler box didn't work out so well last time.

the ingredients are fancier but I recognize the area that the plate and fork comes from. I still have those forks. :D

Lol what area is that? When I moved out, I took some plates and cutlery from Mom's house many years back.
 
Wife bought a pack of frozen calamari rings for tonight.

I loathe those things. Can never get them not to taste like a Goodyear Tyre.

Might attempt "crumbing" them with pork rinds and frying in oil.

Probably be served with a green salad.

Yep, +1 for the calamari loathing. Even worse is the calamari 'steak' that has the texture of a memory foam mattress.

For some reason she loves the stuff. Even as rubbery as they do come out.

And calamari steak is her absolute favourite. :sick:

I've had some nice grilled calamari at Crawdaddys Menlyn but that was only the one time.
 
i normally quick fry and doesnt come out bad - i coat them after they have defrosted

but i did freeze some with coating ...and i fried it

came out rubbery as furk
 
For the Calamari Steaks try give them a score first for a more "open" texture or cut them no more than 1/2 cm thick.
 
Yup. Was as horrible as expected.

I dished up 3/4 of the calamari for her. And smothered mine in Tabasco after the first bite.

Will eat a protein bar to make up for the lost calories.
 
Made a small prime rib roast last night. Salted the night before, then brought up to temperature in the oven (little less than medium rare actually, so the sear wouldn't overcook it). Then seared it in the pan with some of the same rendered fat from the roast plus a little bit of butter.

Served with a mushroom and garlic sauce.
