That salad in the middle adds some cool color and focal point to the plate. Nice.
Cheesy nachos covered in garlic butter brocolli & kimchi. Kale chips on the side.
I like 'em soft for the nachos so I boil/steam with just a bit of water in a pot for about 8-10 mins then drain & back in the pot with some crushed garlic & butter. I'm finding the best part of brocolli is the thick part of the stem - it's like creamy marrow inside: Lightly cut away some of the knobly outside of the stem then slice that middle piece up!Nice. Plenty of fiber.
Do you just saute the broccoli in garlic butter?

A nice thick red wine lentil & potato stew with cream-cheese and sauerkraut. Added kochujang & sliced pears to the mix.

Next time I'm in CT I'm coming over for dinner because for the life of me I can't imagine the taste of these combinations.
