You might find your base is ready before the top is properly cooked - not sure how much heat you'll get from the foil. Definitely worth a try though. Can always finish the top off under the over grill if need be.

Yeah this. Get the broiler heated up and you can always give it another 30-60 seconds in there.

I contemplated maybe putting some coals on top of the top stone as an option. I think the fire bricks either side makes sense. I reckon I'm going to have to give everything a good amount of time to heat up.

Of course the dome of the Weber would trap more heat than the braai, but I reckon the braai is hotter to start with.
 
Saw similar on my reddit front page earlier. Yours? Thoughts on using the leftover egg whites to make a meringue topping? I've made a caramel with erythritol, so that may work...

Yep. Added it on there earlier today along with the recipe for fellow low carbers. Also popped it on the dessert porn sub because I reckon it looks yummy.

I actually made egg white omelettes the previous night which is why I had left over yolks and thus made the curd.

I haven't tried a meringue yet but certainly will. I just find that especially with the grainy erythritol it doesn't dissolve completely in low heated mixes. My first lemon curd attempt is a perfect example. The graininess returned as it cooled down and it was horrible. Might try and powder my erythritol.
 
It is not a meringue unfortunately. Just stabilised vanilla whipped cream. I thought about making uncooked meringue, piping it on and then blasting it with the blow torch but I doubt that my liquid sweetener will caramelise and give that golden colour needed. So I settled on the thick cream. Will attempt meringue later with some erythritol.

Crust was simply almond flour, butter and coconut oil with cocoa powder added to give it a choc flavour. Chilled in fridge until it sets. I then scooped in the curd from the previous night (had to heat it up slightly to get it nice and even). Put it back in the fridge for an hour or so while I fed the kids and made the cream. Piped on the cream (must practice), snapped a few photos and dug in.

Wife had her second helping last night already and my second one is at work today for a lunch snack.

Do you mind if I share this recipe with a banting friend? She was just saying the other day how much she misses sweet stuff. Thanks for sharing

Nice. I must make a plan to Braai saam skaap tjoppies this weekend. Been a while.

Tonight was a simple green salad and some cheese grillers.
 
Attempting a chickpea curry.

Probably the first vegetarian meal I've ever cooked.

Opted for the packet curry spice recipe rather than the do it yourself as I didn't want to buy 500 ingredients.

Couldn't get some nice skaap tjoppies so I settled on a thick picanha pork steak. Yummy.

Not a big fan of "wildswors" (what is it called it English?) at all but got this piece of Springbok wors from a client and decided to try it out. Wasn't bad at all. Not dry like it usually is and didn't have that distinct wild taste. But still not a fan.

Coleslaw on the side.

2 cups Basmati Rice
2 Tablespoons Vegetable Oil
1 whole Large Onion, Diced Fine
Salt And Pepper, to taste
2 teaspoons Curry Powder
2 cloves Garlic
1 cup Vegetable Stock
2 cans Chickpeas, Drained And Rinsed
1 can Coconut Milk
1 Tablespoon Honey
1 Tablespoon Sriracha
Fresh coriander, For Garnish (I forgot even though I bought some as the garden is a bit slow.

Was a bit too sweet and curry just hot and not really tasty. But that serves me right for buying Cartwright's on recommendation against my better judgment.
 
Beef and Guinness stew with mash.

Twas good.
