I prefer frying the onion first. Then adding a bit of liquid and the curry spice (or even a quick dry-fry without liquid) - that little bit of high heat brings out the flavor of the spice, then add rest of the liquid & ingredients. Looks like it needs some pumpkin, red peppers & chillis. Have you tried using a red-thai curry sauce instead of the curry powder?Added lentils to the mix and kept it vegetarian but it still doesn't seem quite right and a little bland.
