Jalapeño Cornbread Muffins.

Batter wasn't quite as much as recipe instructed which is why they are a bit flat.

A little oily but very tasty and not spicy at all so normal people can enjoy it too.
 
You know when someone puts the squiggle on the 'n' they're serious about their chilis :D.

Although I do spell it like that auto correct also won't have it any other way.

Ate the first bunch just like that while they were warm but will probably have the rest in the coming days with some extras.

Actually found the recipe by asking Google "what to do with left over jalapeños" since Checkers only sells pre packed bags these days and there are always some left over after making chilli con carne.

The confusion between corn starch and corn meal from America and corn meal from everywhere else is what caused some delay. Ended up realising it's plain old mielie pap.

@sauronza I'm not sure that mielie pap is the same as American corn meal in texture. I use masa harina flour to make cornbread and tortillas etc and it's much finer than mielie.

Yeah obviously the South African mielies are quite different and probably the process too.

Where do you get that? I couldn't find anything in Checkers and then came home and happened to read the maize meal packet.
 
This local maize flour is quite nice, probably a lot finer than maizemeal. Almost the consistency of regular flour.

Is that what you make polenta within as well?
No, masa harina tastes very strongly like Mexican food. The polenta I use is the Health Connection brand.

Note most Americans won't use masa, they generally cook from packet mix, the authentic way

Health Connection is always under the banting section isn't it?

Anyone with a lekker mince recipe in the pan? Something other than adding chili and cumin :D

Maybe should've added some more detail... something low carb as well... and I want to be able to make it on the fire. the only real thing I can come up with is a chili con carne

Yea that's a crucial bit of info :p You want to make it on the fire in a pan? How's that gonna work?

And I'm quite honestly massively surprised. I was reluctant to buy the Rx model just for the soup function but this is really good.

Throw a chicken breast in there and it will be awesome.

Next time I'll just hold back some whole pieces and chuck them in at the end for a quick blend to thicken it up.
