Tonight some fried avo (got two huge ones from Durban I need to use), smokey aubergine and kimchi.
Bit of a mess.
Nice, maybe a bit too sweet (the avo itself was sweet + the flour). I dusted with coconut flour, salt and spices...need a more neutral flour next time. The internet seems to love panko & avo / breadcrumbs (google fried or baked avo). Crispy on the outside, soft and creamy on the inside - I like it. Didn't bake mine just fried in a pan with some oil until golden brown each side.Fried avo? How is it? Is the kimchi homemade?

Yeah the kimchi is homemade - this one has been sitting for about 6 weeks+ I think so it's tasting really good right now.
