I made a variation of this thai coconut grilled chicken but was too lazy to use a proper camera and the phone pic is uber yukky.

Tonight is texas style chili with sour cream and cheese.

I used the marinade as a sauce after adding more coconut cream and lemon juice. I deboned the chicken before marinating. I also sauteed some bok choy and chucked that into the sauce.

The longest part was the marinating time. Since the chicken was deboned grilling didn't take long at all. Reducing the sauce happened while the chicken was being cooked.

She'll do maybe two and then one day away day.

Except when I'm on standby/late shift.
