You must marinate the chicken pieces in yoghurt and the spice paste and leave in fridge for a few hours before cooking. Overnight is even better.

My easy version...

Plain yoghurt (250ml), garlic and ginger paste (about tablespoon), garam masala (about table spoon) and chicken. Marinade overnight.

Butter in pan (as much as your heart can take) and fry half finely chopped onion, garlic and ginger paste (about a heaped teaspoon or more if you want.). Once translucent add turmeric (1/2 teaspoon) and let fry a minute or two. Add masala (red one, as much as your a$$ can handle) and let fry a minute or two. Add marinated chicken and yoghurt and cook till done.

This is what I use.
Prep today, leave overnight, then a quick cook tomorrow.


Then add...


And fresh chopped coriander to taste.
