Brewed in french press. I saw a few guys on twatter doing similar, so I thought I'd give it a try. Added some cracked pepper and chilli.

Nomu has a coffee rub that I’ve used with ostrich and worked very well.

I imagine on something more robust like wild meat it would work really well.

That's why I thought the flank would work. It's not got a lot of fat but it has a really meaty flavour.
