Indoors? wtf sam. There's too much smoke for it to be in doors. Sounds like you had the volume turned down very low...

i did have it low

and yeah when i put it on high the 2nd time the house was smoked up

but next time will take it outside

did you season the grid though ?
i basted it with some oil and put in the oven for around 1h

the basting sauce got stuck so need to get a brush and cleaner for it

but managed to scrape most off

house smoked up - a friend had a similar problem.
simple cheap solution: grab one of those cheap box shaped fans, shove it directly in front of your kitchen window (on the window shelf) blowing air out - all smoke is gone - works like a furiously powerful extractor.
(however, keep other doors & windows shut - if there is a cross breeze, like with all extractor fans, this cannot work)

for basting sauce that get stuck to the pan, while the pan is still warm (not hot), add soy sauce - dont know what it is, but if you have something burnt to the surface of a pan or skillet, soy sauce seems to get in & lift the burnt remains - try it

i kept the grid overnight

assuming that it would be ok the next day with just some boiling water

didnt work so nicely

/facepalm why the hell would you baste the grill? o my soul...

you had some good meat there, why use anything like basting or marinade. Just spice the fscker with salt and pepper and let it burnnnn

don't understand it when people pay good money for good meat, and then toss the taste out the window with a foreign tasting sauce... makes no sense, unless you buy a meat that taste like cardboard like fillet.

the wife wanted some marinade

i only had salt and pepper and a good load on it

i never touch marinade anymore after salt and pepper

and i always salt it atleast 1hr before

you should become a wife beater until she gets marinade out of the mind... i've been giving my wife a good beating for more than 6 months already trying to shake her sauce schit habit...

i put very little marinade but cause i left it overnight it got stuck there

they have the best price to quantity fish and chips across most fish and chip places

at OB you get 2 decent pieces for like R47

at fishaway and others it likes one piece for the same price

and OB is always fresh

Does not look great I know but it is comfort food and tastes amazing. It is basically just meatballs wrapped in cabbage leaves.

Disastrous aioli (it never coagulated properly so it was basically liquid), fantastic lamb chops and butternut chips.

Yup. 12 at night, most times... This stuff really doesn't take a ton of time if you prep properly. Stuff that cooks for hours just need to be kept steady, which happens when you don't mess with it too often. The Maveric Digital Wireless thermometer has been a huge help with this though. Just leave it on my desk, and I know when/if I need to make adjustments.

That blows. What do you do for a living?
