Spinach and feta quiche that turned out again to be watery scrambled eggs. 
But I read up a bit. My mistakes were numerous:

But I read up a bit. My mistakes were numerous:
- Spinach still too soggy - I did try top squeeze out most of the moisture but obviously it wasn't enough.
- A large onion also added too much moisture.
- I didn't add enough salt to the egg, milk mixture for the proteins to bind.
- And my oven was too hot and my quiche too thick so it ended up being too much like scrambled eggs.
But not that it was bad tasting. It tasted like scrambled eggs with spinach and cheese.
