so last night i boiled some water with some spice ..let it cool

added chicken and left overnight

tonight im going to try randhirs recipe :D

Remember to add salt proportionate to the volume of the water - 5%. Are you taking the skins off the garlic? I reckon you should, and report back on the results so I know for next time :p
 
hahah the recipe i got says dont take off the skins so will leave it as is

and i added about 100ml (used the measuring jug in ML :D) of salt to the 2l of water

didnt throw tooo much of salt

added little pepper and garlic and chilli flakes
 
i bought stock cubes ..do i just add it to some water ?

quite difficult finding cubes thats halaal stamped ..the knorrox ones were and never used them before

I ask because I just realised - brining will add salt to your dish, adding stock that has salt might make it unbearably salty.
 
hmm hope it doesnt come out tooo salty

i did add 3 teaspoons sugar to the brine ...read it somewhere

but will taste 1st and see if i can kill the saltiness somehow

i will maybe use one stock cube and some grape juice

I'd advise against grape juice. In the past I've used white or red wine vinegar and added a bit of sugar to approximate wine. Grape juice will have a completely different profile to wine.
