Spliced up a chicken, rub was applied this morning. Weber kettle is set up to bake at around 160C. Can't wait.

I still need a proper digital thermometer with probes for the meat and the ambient temperature of the kettle. Battling to find a semi-affordable one in SA.
Rub was garlic powder, paprika, black pepper, some brown and white sugar. Salt was added before that.
Kettle was set up for indirect heat, and I added some Apple wood (not a lot) while it was cooking. My fiancee made a naartjie/butter/garlic glaze for finishing.
Please do tell me when you find an affordable probe thermometer. I've been lookig for one but they are, as you said, expensive.

I have one like that, which is good for an instant read. When making things like roast leg of lamb, you can leave the probe in the meat in the oven and it will alert you when it hits the temp you want. Also good for smokers or webers etc. to monitor the temp of the internal heat as Randhir pointed out.isn't one like this sufficient?

Wusthof's are good. Don't bother with a boning knife, get a good chef's knife, around 18-22 cm.

Baked/Smoked for around 75 mins, then added sauce and caramelised over the flames.
That looks amazing *drooling*
