I still need a proper digital thermometer with probes for the meat and the ambient temperature of the kettle. Battling to find a semi-affordable one in SA.

what rub and did you just add coals in the weber ..waited till 160c and added the chicken

Rub was garlic powder, paprika, black pepper, some brown and white sugar. Salt was added before that.

Kettle was set up for indirect heat, and I added some Apple wood (not a lot) while it was cooking. My fiancee made a naartjie/butter/garlic glaze for finishing.

Please do tell me when you find an affordable probe thermometer. I've been lookig for one but they are, as you said, expensive.

damn you to hell rhandy. ive got 2 items in my cart already. :( is wusthof I good knife? I need a versatile one to cut and trim all meat. is a boning knife versatile?

Wusthof's are good. Don't bother with a boning knife, get a good chef's knife, around 18-22 cm.

The Global brand is also excellent and a bit cheaper than Wusthoff. Zwilling also make great knives.

What I'd suggest doing is window-shopping there and trying to source the products elsewhere. I use YuppieChef often, but primarily because they have a large selection and their customer service is great. Free delivery on all items is also plus. However, they do have a big markup compared to other places for a lot of their stuff.

We ended up having boerie rolls and chips from Wajid's last night as we came home late.

Will be doing the chicken and chips tonight.
